Ingredients
- 1 box spaghetti or macaroni
- 1 can sardines in oil (you can use sardines in tomato sauce too)
- 1 small onion, sliced
- 1 bell pepper, sliced
- 2 cloves garlic, minced
- 1 Maggi cube (or 1 tbsp bouillon powder)
- 2 tbsp oil (use the sardine oil for extra flavor)
- 1 tbsp tomato paste (optional, for color and depth)
- Fresh parsley (for garnish)
- Scotch bonnet or hot pepper (optional, for heat)
Instructions
- Cook the pasta: Boil pasta according to package directions, drain, and set aside.
- Sautรฉ aromatics: In a pan, heat oil, then add onion, bell pepper, and garlic. Cook until softened and fragrant.
- Add sardines: Drop in the sardines (keep them whole or break them up โ your choice). Stir gently.
- Season: Add Maggi cube, tomato paste (if using), and hot pepper. Cook 2โ3 minutes until everything blends.
- Toss pasta: Add cooked pasta to the pan and mix well, letting it soak up all the flavor.
- Finish: Garnish with fresh parsley and serve hot.
