Ingredients

  • 1 box spaghetti or macaroni
  • 1 can sardines in oil (you can use sardines in tomato sauce too)
  • 1 small onion, sliced
  • 1 bell pepper, sliced
  • 2 cloves garlic, minced
  • 1 Maggi cube (or 1 tbsp bouillon powder)
  • 2 tbsp oil (use the sardine oil for extra flavor)
  • 1 tbsp tomato paste (optional, for color and depth)
  • Fresh parsley (for garnish)
  • Scotch bonnet or hot pepper (optional, for heat)

Instructions

  1. Cook the pasta: Boil pasta according to package directions, drain, and set aside.
  2. Sauté aromatics: In a pan, heat oil, then add onion, bell pepper, and garlic. Cook until softened and fragrant.
  3. Add sardines: Drop in the sardines (keep them whole or break them up — your choice). Stir gently.
  4. Season: Add Maggi cube, tomato paste (if using), and hot pepper. Cook 2–3 minutes until everything blends.
  5. Toss pasta: Add cooked pasta to the pan and mix well, letting it soak up all the flavor.
