Back-to-school season has me running in ten different directions. One kid in kindergarten, another in PK3, a baby still at home with me while I work, and somewhere in there, I’m still trying to garden. Most days I’m relying on Florida rain to keep things alive. But I wanted something simple, something that felt like a win in the middle of the chaos. That’s why I set up a rolling raised bed.

The “rolling” part is the lifesaver. I can chase the sun when I need to, roll it under cover when a storm blows in, or push it out of the way when the kids decide the backyard is their racetrack. And let’s be real, after a long day of school drop-offs and toddler meltdowns, the last thing I want is to hunch over garden beds. This setup saves my back and gives me fresh food right by the kitchen door.

The Herbs I Planted (and Why They Work for Busy Moms)

  • Basil – Pizza night feels fancy with fresh basil, and the kids love it.
  • Thyme – My go-to for chicken and roasted veggies. Makes dinner look planned when it isn’t.
  • Parsley – It grows fast, so I always feel like I’m winning. Perfect tossed in rice or soups.
  • Dill – Salmon with dill is my quick “grown-up” meal when I want something just for me and Jermaine.
  • Oregano – Pasta night’s best friend. Enough said.
  • Cilantro – Guacamole is non-negotiable in this house.
  • Mint – Dropped in tea or cold water when I need a mini spa moment.
  • Rosemary – Smells amazing and never dies, which is why I respect it.

These herbs don’t just sit there looking pretty. They end up in my kitchen every single week. And honestly? That’s what makes it worth it — no wasted space, no wasted food.

Building the Bed (My Garden Lasagna)

When I filled the bed, I kept it simple — layers that do the work for me:

  • Compost from my Vego Kitchen Composter (plus mushroom compost to bulk it up).
  • Coco Coir to hold water in the Florida heat.
  • Perlite (yep, volcanic glass!) to keep roots breathing during summer storms.
  • Raised bed soil to tie everything together.
  • Worm Castings — gentle, organic, and plants love it.
  • Mulch on top to hold in moisture and keep weeds down.
  • And of course, Herb Seeds, because the kids love watching them sprout.

It’s like stacking a lasagna. Each layer has its job, and together they make a bed that pretty much takes care of itself.

Why This Bed Works for Me

For me, gardening isn’t about perfection right now. It’s about creating little wins in the middle of busy mom life. A rolling raised bed means I can grow food without adding more stress to my plate. It’s flexible, forgiving, and honestly, it’s fun to roll around.
