Juggling It All: A Day in My Life

Toni Jefferson

Some days are just a mix of it all - being a mom, working full-time, trying to create content, being a wife, and still having a garden out there waiting on me. It all falls in the same day whether I planned it or not.

This morning I went for a jog with my son, came back feeling good, and of course my daughter popped up wanting her turn. So back out I went. Later we hit the park, and let me be real, the only way I get my kids to leave without a meltdown is with a Publix bribe. And yes, I came home with another plant. An herb this time. At this point, it’s a problem I don’t even want to fix.

By the evening it was dinner, hair, and bedtime routines. No gardening today. But yesterday I dropped collards, carrots, and even some potato eyes in the soil. That’s how it goes, some days I’m in the dirt, other days I’m just thankful the garden keeps growing without me.

What I Planted

Collards 🥬

  • Plant in fall or winter in Florida
  • Sow seeds ½ inch deep, 18 inches apart
  • Sprout in 5–10 days, ready in 60–85 days
  • Keep soil moist, not soggy

Carrots 🥕

  • Best in fall through spring
  • Scatter seeds, cover lightly with ¼ inch soil
  • Sprout in 1–3 weeks, harvest in 70–80 days
  • Loose soil = long, straight carrots

Potatoes 🥔

  • Plant in fall or early spring
  • Cut chunks with eyes, dry overnight
  • Plant 4–6 inches deep, 12 inches apart
  • Sprout in 2–3 weeks, harvest in 3–4 months
  • Hill soil around stems for more potatoes

🌱 Real Talk: Some days I don’t touch the garden, but the seeds are still out there doing their thing. Growth doesn’t need perfection, just a start and a little love along the way.

✨ Save this post for later - and if you’re ready to try, here are my favorite seeds that always come through.
