Banana Caramel French Toast 🍌

Banana caramel French toast with berries and powdered sugar

Tell me why we need to go to brunch when we can make this right at home.

We had brunch at a restaurant a while back and I could not stop thinking about it. So I came home and made it myself. Thick, buttery French toast with warm caramelized bananas, berries and powdered sugar. It looks like you spent all morning on it. You did not.

Banana milk in the custard

The custard is eggs, banana milk, heavy cream, brown sugar, vanilla, a little pumpkin pie spice and salt. The banana milk carries the flavor all the way through the bread. Dip each slice about 10 seconds a side and let the extra drip off before it hits the griddle.

French toast was made for the griddle. Around 350°F with butter, about 3 minutes on the first side and 2 to 3 on the second. If it browns too fast, turn it down. A little crispy is fine with me.

The caramel takes five minutes

Butter melts, brown sugar goes in, then real maple syrup, pumpkin pie spice and a pinch of salt. Let it bubble. The bananas go in and sit 30 seconds before you turn them, so they caramelize instead of turning to mush. Lower the heat, then vanilla and a splash of heavy cream until it is glossy.

Turkey bacon and eggs went right on the same griddle. Stack it, spoon the bananas over, berries and powdered sugar on top. Everybody showed up at the counter at the same time. Funny how that works.

Notes

No banana milk? Use whole milk and mash half a banana into the custard.

Day old brioche soaks better without falling apart.
